Pesto Bites with Bagel Chips

Ingredients

 
  • 1 tablespoonbasil pesto
  • 1/4 cupchopped pine nuts
  • 1/4 cupchopped sundried tomatoes or char-grilled capsicum
  • 170g packetmini bagel chips or 125g packet CAPTAIN'S TABLE* Water Crackers
  • 2 spring onions, finely sliced
  • 2 tablespoonsolive oil
  • 250gblock PHILADELPHIA Cream Cheese, softened to room temperature
 

Instructions

 
  • Beat Philly* and pesto with an electric mixer until smooth. Fold through tomatoes. Place mixture onto baking paper and form into a 40cm long sausage and coat in pine nuts. Chill for 1 hour or until firm. Slice into 2cm circles.
  • Place Philly* bites onto a baking tray and drizzle with olive oil. Bake at 180°C for 10 minutes or until nuts are golden brown.
  • Place individual bites on the bagel chips or water crackers, garnish with spring onion and serve.
