Ingredients
- 1 cup chopped dried apricots
- 1 cup unprocessed bran
- 1/2 cup milk
- 1/2 cup raw sugar
- 125g block PHILADELPHIA Cream Cheese, softened
- 2 cups grated carrot
- 2 cups self raising flour
- 2 tablespoons flaked almonds
- 3 eggs, lightly beaten
Instructions
- Combine flour, bran, apricots and carrot.
- Beat PHILADELPHIA until smooth, add eggs and sugar gradually, beating to combine.
- Add cheese mixture to dry ingredients, add milk and mix well. Place mixture in a lined 21cm x 10 cm loaf tin and sprinkle with flaked almonds.
- Bake at 160°C for 50-60 minutes. Cool on a wire rack before slicing.
