Ingredients

 
  • 1 cup chopped dried apricots
  • 1 cup unprocessed bran
  • 1/2 cup milk
  • 1/2 cup raw sugar
  • 125g block PHILADELPHIA Cream Cheese, softened
  • 2 cups grated carrot
  • 2 cups self raising flour
  • 2 tablespoons flaked almonds
  • 3 eggs, lightly beaten
 

Instructions

 
  • Combine flour, bran, apricots and carrot.
  • Beat PHILADELPHIA until smooth, add eggs and sugar gradually, beating to combine.
  • Add cheese mixture to dry ingredients, add milk and mix well. Place mixture in a lined 21cm x 10 cm loaf tin and sprinkle with flaked almonds.
  • Bake at 160°C for 50-60 minutes. Cool on a wire rack before slicing.
