Ingredients

 
  • 1fresh kaffir lime leaf, finely chopped
  • 1 clovegarlic, finely chopped
  • 1 tablespoonprepared tomato and chilli pickle
  • 1 teaspoonlime juice
  • 1/2onion, finely chopped
  • 1/2 teaspoonfinely chopped fresh ginger
  • 1/2 teaspoonfinely chopped lemon grass
  • 1/4 teaspoonground coriander
  • 125mlcoconut milk
  • 2birdseye chillies, finely chopped
  • 250gtub PHILADELPHIA Spreadable Cream Cheese, softened
 

Instructions

 
  • Heat a little oil in a saucepan and cook onion and garlic for 5 minutes or until onion is soft.
  • Stir in chilli, ginger, lemon grass, lime leaf and coriander and cook a further 10 minutes.
  • Add lime juice, Philly*, coconut milk and tomato and chilli pickle. Stir over a low heat until smooth.
