Ingredients
- assortment of lollies
- 1 1/2 tablespoonsgelatine dissolved in
- 1 cup biscuit crumbs
- 1/2 cup caster sugar
- 1/2 cup passion fruit pulp
- 1/2 cup strawberry pureé
- 1/3 cup butter, melted
- 1/4 cup hot water
- 1/4 cup lemon juice
- 2 tablespoons grated lemon rind
- 500g block PHILADELPHIA Cream Cheese, softened
Instructions
- Combine biscuit crumbs and butter. Press into the base of a 22cm spring form pan; chill.
- Beat PHILADELPHIA until smooth, add sugar, lemon juice, lemon rind, gelatine mixture and blend well.
- Divide mixture in half. Add 1/2 cup passionfruit pulp to one portion. Pour into prepared crumb crust and chill until firm (15 minutes).
- Add 1/2 cup strawberry pureé to the remaining cheesecake mixture. Pour over firm passionfruit mixture; chill. Decorate top of cheesecake with assorted lollies e.g. smarties to create a clowns face.
