Ingredients

 
  • extra whipped cream
  • grated rind and juice of 2 limes
  • icing sugar
  • 1 cupbiscuit crumbs
  • 1 cupcaster sugar
  • 1/2 cupdesiccated coconut
  • 1/2 cuppassion fruit pulp
  • 2 egg whites, beaten to soft peaks
  • 3 teaspoonsgelatine dissolved in 1/4 cup boiling water
  • 300mlcream, beaten
  • 500gblock PHILADELPHIA Cream Cheese, softened
  • 80gbutter, melted
 
 

Instructions

 
  • Combine biscuits, coconut and butter. Press into a buttered and lined 22cm spring form pan. Chill.
  • Beat the Philly*, sugar, and lime until smooth. Add the gelatine mixture and passionfruit. Fold in the whipped cream and beaten egg whites.
  • Pour into prepared crust and refrigerate until set. Decorate with whipped cream and dust heavily with icing sugar.
