Ingredients
- extra whipped cream
- grated rind and juice of 2 limes
- icing sugar
- 1 cupbiscuit crumbs
- 1 cupcaster sugar
- 1/2 cupdesiccated coconut
- 1/2 cuppassion fruit pulp
- 2 egg whites, beaten to soft peaks
- 3 teaspoonsgelatine dissolved in 1/4 cup boiling water
- 300mlcream, beaten
- 500gblock PHILADELPHIA Cream Cheese, softened
- 80gbutter, melted
Instructions
- Combine biscuits, coconut and butter. Press into a buttered and lined 22cm spring form pan. Chill.
- Beat the Philly*, sugar, and lime until smooth. Add the gelatine mixture and passionfruit. Fold in the whipped cream and beaten egg whites.
- Pour into prepared crust and refrigerate until set. Decorate with whipped cream and dust heavily with icing sugar.
